Pantry & grains

  • olive oil1 tbsp

Spices

  • dried oregano1 tsp

Method

  1. 1

Grate the garlic and juice half the lemon. Stir both into the yogurt with a pinch of salt to make a quick tzatziki.

Dice the cucumber and tomatoes. Chop the parsley. Toss together with the juice of the remaining lemon half, a pinch of salt and pepper.

  3. 3

Shred the chicken. Heat the oil in a skillet over medium-high heat.

  4. 4

Add the chicken with the oregano, salt and pepper. Cook 4–5 minutes, stirring, until hot and lightly browned at the edges.

  5. 5

Warm the pitas in a dry skillet or microwave for 20–30 seconds until soft and pliable.

  6. 6

Spread tzatziki on each pita. Top with chicken and the cucumber-tomato salad, then crumble feta over the top. Fold and serve.

Kitchen note

Pack leftover chicken and salad separately and tuck them into a pita for tomorrow's lunch. The salad stays crisp.
