Ingredients
For 2 servings
Seafood
- raw peeled shrimp1 lb
Cans & jars
- cannellini beans1 can
Produce
- garlic5 clove
- parsley½ bunch
- lemon1 piece
Bakery
- baguette1 piece
Pantry & grains
- olive oil3 tbsp
Spices
- smoked paprika1 tsp
- red pepper flakes½ tsp
- salt½ tsp
Method
- 1
Pat the shrimp very dry and toss with half the smoked paprika and 1/4 tsp salt. Slice the garlic thinly, chop the parsley, and zest then juice the lemon.
- 2
Warm the olive oil and garlic with the red pepper flakes in a large skillet over medium heat for 2 minutes, until fragrant and barely golden.
- 3
Raise the heat to medium-high and add the shrimp in one layer. Cook 2 minutes per side, until pink and curled into a loose C. Move to a plate.
- 4
Add the rinsed beans and the remaining paprika to the skillet. Cook 3 minutes, mashing a few beans to thicken the oil into a sauce.
- 5
Return the shrimp to the pan with the lemon juice, zest and most of the parsley. Toss for 30 seconds.
- 6
Warm the baguette in a 400°F oven or toaster oven for 5 minutes. Serve the shrimp and beans with bread to mop up the garlic oil.
