  • garlic2 clove

Sauces & condiments

  • soy sauce3 tbsp
  • toasted sesame oil1 tsp

Method

  1. 1

Microwave the rice pouches per package directions, then break up clumps with a fork. Shred the chicken and slice the green onions, keeping whites and greens separate. Mince the garlic.

  2. 2

Heat 1 tbsp vegetable oil in a large nonstick skillet over medium-high heat. Add the frozen peas and carrots and cook 3 minutes until thawed and hot.

  3. 3

Push the vegetables aside, add the garlic and green onion whites, and stir 30 seconds until fragrant.

  4. 4

Pour the beaten eggs into the empty space and scramble 1 minute until just set, then mix into the vegetables.

  5. 5

Add the remaining 1 tbsp oil and the rice. Press it against the pan and cook 3 to 4 minutes, stirring occasionally, until hot and lightly crisp in spots.

  6. 6

Stir in the chicken, soy sauce, sesame oil and pepper. Cook 2 minutes until the chicken is heated through.

  7. 7

Top with the green onion greens and serve right away.
