Ingredients

For 2 servings

Meat & poultry

  • ground beef 80/2012 oz

Produce

  • cremini mushroom8 oz
  • green bean8 oz
  • garlic2 clove

Dairy & eggs

  • Swiss cheese slice2 slice
  • butter1 tbsp

Bakery

  • brioche burger bun2 piece

Sauces & condiments

  • mayonnaise2 tbsp
  • Dijon mustard1 tsp

Pantry & grains

  • olive oil1 tbsp

Spices

  • salt1 tsp
  • black pepper½ tsp

Method

  1. 1

Slice mushrooms. Divide beef into 2 portions, shape into patties slightly wider than the buns, and season both sides with salt and pepper.

  2. 2

Heat a large skillet over medium-high. Cook mushrooms in butter with a pinch of salt for 6-7 minutes until browned and dry. Move to a plate.

  3. 3

Wipe the skillet, add 1 tsp oil, and cook patties over medium-high for 3-4 minutes per side until browned and 160°F inside. Top with Swiss and cover for the last minute to melt.

  4. 4

While the burgers cook, heat the remaining oil in a second pan over medium-high. Sauté green beans 6-7 minutes until blistered and crisp-tender, adding sliced garlic for the last 30 seconds.

  5. 5

Stir mayo and Dijon together. Toast buns cut-side down in the burger pan for 1 minute until golden.

  6. 6

Spread sauce on buns, stack with patties and mushrooms, and serve with the green beans.

Kitchen note

Shape the patties in the morning and refrigerate. Skip the mushrooms on a picky eater's burger and serve them on the side.
