Ingredients

For 2 servings

Meat & poultry

  • boneless pork chop1 ¼ lb

Produce

  • trimmed green beans12 oz
  • garlic3 clove

Pantry & grains

  • microwave rice pouch1 package
  • honey1 tbsp
  • olive oil1 tbsp

Sauces & condiments

  • Dijon mustard2 tbsp

Dairy & eggs

  • butter1 tbsp

Spices

  • salt¾ tsp
  • black pepper½ tsp

Method

  1. 1

Pat the pork chops dry and season both sides with salt and pepper. Mince the garlic. Stir the Dijon and honey together in a small bowl.

  2. 2

Heat the oil in a large skillet over medium-high until shimmering. Sear the chops 4 to 5 minutes per side until golden and 145°F inside. Move to a plate and tent with foil.

  3. 3

Lower the heat to medium. Add the green beans and 2 tbsp water to the same skillet. Cook 5 to 6 minutes, stirring, until bright green and crisp-tender.

  4. 4

Add the garlic and cook 30 seconds until fragrant. Stir in the butter, the honey-Dijon mix and 2 tbsp water. Simmer 1 minute until glossy.

  5. 5

Microwave the rice pouch according to the package, about 90 seconds.

  6. 6

Slice the pork against the grain and add it back to the skillet for 30 seconds to coat in the sauce. Serve over the rice with the green beans.

Kitchen note

Cook extra chops and slice them cold into next-day salads or sandwiches. The honey Dijon sauce also works as a dressing.
