Ingredients

For 2 servings

  • ground beef¾ lb

Produce

  • onion1 piece
  • garlic3 clove

Cans & jars

  • canned diced tomatoes1 can

Pantry & grains

  • pasta6 oz
  • olive oil1 tsp

Frozen

  • frozen peas1 cup

Dairy & eggs

  • cheddar1 cup

Sauces & condiments

  • Worcestershire sauce1 tbsp

Spices

  • smoked paprika1 tsp
  • salt½ tsp

Method

  1. 1

Dice the onion and mince the garlic. Shred the cheddar if it isn't already shredded.

  2. 2

Heat oil in a large deep skillet over medium-high. Brown the beef 5 minutes, breaking it up, until no pink remains.

  3. 3

Add onion and cook 3 minutes until soft. Stir in garlic, paprika, salt and pepper for 30 seconds until fragrant.

  4. 4

Add the canned tomatoes with their juice, 1¼ cups water, Worcestershire and the dry pasta. Bring to a boil.

  5. 5

Cover, reduce to medium-low and simmer 10–12 minutes, stirring twice, until the pasta is tender and the sauce has thickened.

  6. 6

Stir in the peas and cook 1 minute until hot. Take off the heat and stir in half the cheddar until melted.

  7. 7

Top with the remaining cheddar, cover for 1 minute to melt, then serve straight from the skillet.

Kitchen note

Leftovers reheat well with a splash of water. Stir in extra cheddar or pack cold portions for lunch.
