Ingredients
For 4 servings
Meat & poultry
- boneless skinless chicken thigh2 lb
Sauces & condiments
- soy sauce⅓ cup
Pantry & grains
- white vinegar¼ cup
- brown sugar1 tbsp
- vegetable oil1 tbsp
- microwave jasmine rice2 package
Produce
- garlic5 clove
- green beans1 lb
- scallion1 bunch
Spices
- bay leaf2 piece
- black pepper½ tsp
Method
- 1
Cut chicken into 2-inch pieces. Smash and mince the garlic. Slice the scallions, keeping whites and greens separate.
- 2
Heat oil in a large deep skillet over medium-high. Sear chicken 4 minutes, stirring once, until lightly browned.
- 3
Add garlic, soy sauce, vinegar, brown sugar, bay leaves, pepper and 1/2 cup water. Bring to a boil, then simmer over medium 12 minutes.
- 4
Add trimmed green beans to the pan for the last 6 minutes, tucking them into the sauce, until bright and just tender.
- 5
Microwave the rice pouches per the package, about 90 seconds. Discard the bay leaves. If the sauce is thin, boil it 2 minutes to glaze the chicken (it should coat a spoon).
- 6
Serve chicken and green beans over rice with sauce spooned on top. Finish with scallion greens.
